Shakshuka

Breakfast, lunch or dinner, Shakshuka is the flavor-packed comfort food you've been missing in your life.

This egg and tomato dish is commonly spiced with cumin, paprika and cayenne pepper, but our resident chef Vanessa put her tasty spin on it. We can't wait for you to try it!

 

What you'll need

▫️ 1 tbsp canola oil
▫️ 1 large onion, sliced
▫️ 2 tbsp garam masala
▫️ 1 tsp chili flakes
▫️ 1 beefsteak tomato, chopped
▫️ salt and pepper, to taste
▫️ 1 can tomato puree
▫️ 1 tbsp honey
▫️ 1 lime
▫️ 4 eggs
▫️ optional toppings: avocado, cilantro, Greek yogurt, nigella seeds

 

What to do

Preheat oven to 400 degrees.

In a hot, oven-proof pan add oil and onions, and sautée until translucent and starting to caramelize. Sprinkle with garam masala and cook for 1 minute.

Add chopped tomato, cooking for another minute. Season with salt and pepper.

Then add the tomato puree, mix well, and bring to a boil.

Add honey, and the juice of 1 lime. Stir and reduce temp to low.

Carefully crack eggs into the tomato sauce, cover with a lid, and bake for 5-8 minutes depending on how well you like your eggs cooked.

Top with any additional topping you might like and serve with bread or flatbread.
